Ribs & Brisket

Ribs & Brisket Ribs & Brisket

Barbecue   BBQ   Barbeque

No matter how it is spelled everybody has their favorite.  Whether it's ribs, chicken, pulled pork, or brisket.  Whether it's Memphis Style, Kansas City Style or Southern BBQ everybody has their favorite.  Have you also noticed that everybody thinks their is "the best"  (myself included)  Case in point, my wifes "Uncle Bud"

This man would come to the annual family reunion from 800 miles away bringing all of his ingredients with him.  He would proclaim that his ribs were the BEST EVER!  No one had the heart to tell him otherwise.  He would spend hours the night before making his "famous sauce".  Then the next day at the reunion he would start the ribs. He would put the massive racks of spare ribs on the grill and let them cook what seemed like forever.  Then when the picnic was almost over he would proclaim his "famous ribs" to be done.  Sure they were cooked but they were no way near DONE! They would be so tough that you could not get the meat off the bones with a meat cleaver.   BUT... that was one damn good sauce!

I learned the secret to that sauce.  He cheated!  He never made it from scratch, he used bottled sauces and just doctored them up.  No one ever knew or asked.  They just knew it was good sauce.  I make my own version of that sauce and it only takes minutes, not hours.  Also I can show you how to take cheaper racks of ribs and make them fall off the bone tender.  Who can afford baby-back ribs all the time?  I can't!  If only Uncle Bud would have listened to me his ribs might have truly been "famous"  Try some of the recipes below and see what you think.  You can make this sauce your own (who will know?), or try changing it a little to suit your own taste then it will truly be "your famous sauce"!  Share it with your friends and family and make your BBQ Better.

I had to add this paragraph because of all the flack I have been getting over "Real Barbecue".  I know! I know! I KNOW! The best barbecue is slow cooked over low heat or in a smoker for a LONG TIME!  Yes, In a perfect world I would start on Friday making the BBQ for Sunday eatin' and on occasion I will pull out the smoker and make a weekend of it.  But, remember these recipes are for the "average cook" not the seasoned pro with all of the tools of the trade at their disposal. Just someone who wants to make great barbecue to share with friends and make it quick and easy.  By the way THANKS for all of the feedback.  ENJOY!
