Baked Swiss Steak

3 pounds of round steak
1/2 cup of flour
salt & pepper
(to taste)
1/4 cup oil
2 large onions
3 large ribs of celery
1/2 pound fresh mushrooms
   
or use 2 cans sliced mushrooms (4 oz) drained
2 cloves garlic
3 cans stewed tomatoes

1 tsp oregano

Quick Tip!!!
When you purchase your steak take the extra time to ask your butcher to run it through the cuber 1 time. This is a really important step in this recipe.  Any store with a meat department will do this free of charge. Remember just 1 time through.
Prepare steak by triming away excess fat and cutting into portion size pieces (3 to 6 ounces). dredge steak through a mixture of flour salt & pepper. Add oil to a large skillet and brown steak in oil with a little extra salt & pepper.

Slice onions, mushrooms and celery all about a 1/4 inch thick. Slice celery crossways at a 45 degree angle. (this is for appearance and gives slightly larger pieces) Peel and sliver garlic.

In a dutch oven add all vegetables, slivered garlic, stewed tomatoes, and spices and mix well. Add steak to sauce mixture and cover steak with sauce.

Cover and bake in a 325 deg. oven for 1-1/2 to 2 hours
Serve with mashed potatoes or over rice.

Any leftover sauce is wonderful over pasta.  ENJOY!
