Ingredients

3-4 lb Whole Chicken
1 can of Beer
1 small Potato or Onion
Your Favorite Dry Rub
1 Beer Can Chicken Rack

Clean and rinse chicken under cold water inside and out. Drain and pat dry with paper towels. Apply your favorite dry rub liberally inside and out.

Open your can of beer and drink half, or simply pour half of the beer down the drain. (but,wasting the beer would be alcohol abuse). Place the whole seasoned chicken over the can rack. Stuff the potato or onion in the neck cavity to seal in the juices. Place chicken rack onto a pie pan or cookie sheet.

Preheat oven to 350 deg. Cook chicken 1-1/4 to 2 hours until meat thermometer reads 180 deg in the thigh. Skin should be crisp and golden brown.

Remove from oven and let chicken rest for 5-10 minutes. Recruit a friend to hold the base of the rack as you remove the chicken with tongs and a serving fork. Be careful not to spill the hot liquid still in the can and burn yourself.

Carve chicken as normal and serve. ENJOY!
  • Beer Can Chicken Racks are available at most big box stores or wherever you find BBQ supplies. I got mine for under 5 bucks each at Walmart.
  • Any seasoning will do... Poultry seasoning, plain salt and pepper, garlic powder, barbecue dry rub, Canadian steak seasoning, Teena Spice, or what ever you like.
  • Instead of beer... Try cola, cream soda, or just plain water.
  • You can add extra seasoning to the can of liquid. try extra dry rub, slivered garlic, liquid smoke, soy sauce, or worcestershire sauce.
  • Works great on the grill... (charcoal or gas) just use indirect heat with lid closed, rotate as needed for even cooking.
