Buffalo Style Chicken Wings

You need more than a good sauce to make good chicken wings, so lets start by cooking some good chicken!

There are different ways to cook your wings. I prefer deep fried just because I like my wings well done and this is the easiest way to get your wings good & done. But they also come out great by baking or grilling. If using frozen wing sections these are best deep fried, just too much liquid for baking or grilling. Fresh chicken wings can be cooked anyway you like and come out equally well no matter which way you choose. When cooking on an outdoor grill it is better and easier to use the whole wing with tip and fold the tip behind the drumette. This makes it easier to turn the wings and is a whole lot less work! By the way, avoid the frozen breaded wings. They may be OK for boneless style wings but breading on great chicken wings is just NOT necessary.

Simple Wing Sauce
Simply mix melted butter or margarine and red pepper sauce. Mix it 50 / 50 for medium heat wings. A little more butter for mild or a little more red pepper sauce for hotter wings. I prefer Franks Redhot but other good brands are Durkee's & Texas Pete. Have fun and try different brands, they each have their own unique flavor.

Extra Hot Wings
Start with the simple wing sauce for the hotter wings (above) and for each cup of sauce made add 1/4 teaspoon cayenne pepper and a dash of red pepper flakes. And for extra fun and flavor I like to add about 1/2 of a fresh jalapeno (finely minced). Simmer over medium heat for 5-10 minutes to allow flavors to mix and bring out the heat of the peppers. (please keep away from small children, pets and wimps).

Honey Mustard Wings
Mix 1/2 cup honey with 1/4 cup spicy brown mustard. Microwave a few seconds to make sauce a little thinner before rolling wings in sauce. This sauce can also be made with the more popular dijon mustard or even plain yellow mustard. All 3 taste good but I personally like the spicy brown mustard best.

Sweet BBQ Wings
Start with your favorite bottled BBQ sauce. I like to use Cattleman's Original BBQ sauce. For each cup of BBQ sauce add 2 tablespoons of honey and 1 tablespoon of brown sugar. Microwave on high for about 1 minute before rolling wings in sauce.

Hot Honey BBQ Wings
Start with your favorite bottled BBQ sauce. I like to use Cattleman's Original BBQ sauce. For each cup of BBQ sauce add 2 tablespoons of honey and 2 tablespoons of red pepper sauce and 1/4 teaspoon of crushed red pepper flakes. Microwave on high for about 1 minute before rolling wings in sauce.

Garlic-Parmesan Wings
This is the new family favorite. Mix 1 cup of melted butter, 1 small clove of garlic (pressed or finely minced in a food processor), and 1/4 cup grated parmesan cheese together and microwave on high for 1 minute and mix well before rolling wings in sauce.
