Cheesy Potato Medley Soup
Ingredients...
2 - 4 medium potatoes ( peeled, cubed)
- 1 pkg. (10oz) California Blend frozen vegetables
(cauliflower, broccoli, and carrots)
- 2 tbsp. butter or margarine
- 1/4 cup chopped onion
- 2 tbsp. flour
- 2-1/2 cups milk
- 1 lb Velveeta Cheese
(cubed)
- salt and pepper to taste
Directions...
In medium saucepan boil potatoes until just done (fork tender). melt butter in a large saucepan on medium heat. Add onion and cook 5 minutes or until onion is tender. Add flour and cook an additional minute until bubbly, stirring constantly.
Stir in milk and bring to a slow boil. Reduce heat to medium-low.
Add remaining ingredients except potatoes. Cook until Velveeta is melted and soup is heated through-out stirring occasionally.
Drain potatoes and add to soup. Heat an additional 3-4 minutes. ENJOY!
