Cheesy Potato Medley Soup

Ingredients...
  •         2 - 4 medium potatoes ( peeled, cubed)
  •         1 pkg. (10oz) California Blend frozen vegetables (cauliflower, broccoli, and carrots)
  •         2 tbsp. butter or margarine
  •         1/4 cup chopped onion
  •         2 tbsp. flour
  •         2-1/2 cups milk
  •         1 lb Velveeta Cheese (cubed)
  •         salt and pepper to taste


Directions...

In medium saucepan boil potatoes until just done (fork tender). melt butter in a large saucepan on medium heat. Add onion and cook 5 minutes or until onion is tender. Add flour and cook an additional minute until bubbly, stirring constantly.
Stir in milk and bring to a slow boil. Reduce heat to medium-low.
Add remaining ingredients except potatoes. Cook until Velveeta is melted and soup is heated through-out stirring occasionally.
Drain potatoes and add to soup. Heat an additional 3-4 minutes.  ENJOY!
