Put ribs in large stock pot and cover with water & bring to a full boil Reduce heat & continue to boil ribs until tender but not falling apart. Drain ribs and while still warm coat with apple butter.
Saute apple and onion in butter until tender.Add undrained sauerkraut, apple cider vinegar, caraway seed, brown sugar, and pepper. Simmer on med. heat for 3-5 minutes.
Place ribs into a shallow baking dish and cover with sauerkraut mixture. Cover and bake in a 325 deg. oven for 1 to 1-1/2 hours.
This recipe is also great on the BBQ grill. After ribs are boiled just grill ribs over medium heat for 30 to 60 minutes and baste often with apple butter. transfer sauerkraut mixture to a foil packet and cook on top rack on grill while ribs cook, turning often.
Serve with baked potato or fried taters & onions ENJOY!
