Meatball Ingredients
1/2 lb ground beef
1/2 lb mild Italian sausage
1 large egg
1/4 cup dry bread crumbs
2 tbsp grated parmesan cheese
1/4 tsp salt
1/4 tsp black pepper
Soup Ingredients
1 - 28oz can of whole tomatoes (undrained)
2 cloves garlic (minced)
2 medium carrots (sliced thin)
1 small zucchini (sliced thin)
1 small onion (chopped)
1 cup uncooked pasta (rotini or small shells)
3 cups hot water
4 beef bouillon cubes
1 tsp Italian seasoning
1/4 tsp red pepper flakes (optional)
extra grated parmesan cheese
Directions
In large bowl add the meatball ingredients and mix well. Form into 3/4 inch meatballs. Brown meatballs over medium heat in a 6 quart stock pot or dutch oven with a little bit of oil, turning frequently. Drain off excess fat from meatballs. Add onion and garlic to pan and continue cooking until onion is tender. Coarsely chop tomatoes reserving juice. Add remaining ingredients, except zucchini and extra parmesan cheese. Bring to a boil. Reduce heat, cover and simmer for 10 minutes. Add zucchini, cover and simmer for an additional 5 minutes. Serve with parmesan cheese. ENJOY!
