Reva's Easy Macaroni Salad
2-1/2 cups of mayonnaise
2 large hard boiled eggs, chopped
1 cup chopped celery
1 cup chopped onion
3/4 cup shredded carrot
1/3 cup sweet pickle relish
1 tsp dry ground mustard
1/4 tsp black pepper
1/2 tsp salt
One 16 ounce package of pasta
for a classic look use elbow macaroni or for a fancy
look use shell, penne, or gemelli pasta
Cook pasta according to package directions. (do not over cook)
Drain and rince in cold water to stop the pasta from cooking further.
Combine all ingredients in a large bowl and mix well.
Cover and refrigerate for several hours.
If taking to a picnic, for safety reasons remember to keep refrigerated or nestle your bowl in a larger bowl full of crushed ice to keep cold.
