Salmon Margarita
Ingredients:

4-6 Fresh Salmon Steaks
1/4 cup lime juice
Zest of 1/2 lime or lemon
2 tbsp olive oil
2 tbsp tequila
1/2 tsp salt
1/8 tsp cayenne pepper
1 clove of garlic (crushed)
Dash of black pepper
Mix all ingredients (except salmon steaks of course) to form a marinade. Put salmon steaks into a glass dish and pour marinade over steaks. Cover and refergerate for about 1 hour, turning a few times to evenly coat. Preheat grill to medium-high and coat with nonstick spray or rub with oil just before putting fish on grill. Cook salmon for 6-8 minutes per side until salmon flakes easily with a fork. Brush with marinade several times during cooking. Discard extra marinade. Garnish with lemon or lime slices.
