Salmon Patties

1 can pink salmon (15.5 oz)
1 cup fine dry bread crumbs
1/2 cup chopped green onions
1/4 cup chopped parsley
2 eggs (beaten)
1 tbps lemon juice
1 tsp prepared mustard
Velveeta Cheese (optional)
Corsely mix all ingredents in a bowl and refrigerate for about 1/2 hour to let flavors mix and make the mixture easier to handle

On wax paper form salmon mixture into 5 to 6 inch round by 1/2 inch thick patties

Pan fry in a little butter until browned on both sides
During last minute of cooking add about 1/2 ounce of velveeta cheese to each pattie and cover to melt cheese

Serving suggestion: goes great with a baked potato and a small green salad.  ENJOY!
