Salsa Grilled Tuna
with Chili-Mango Salsa

Ingredients

4 Fresh Tuna Steaks
use your favorite... Albacore, Bluefin, Yellowfin ect.
do your homework there is a difference.

1 ripe mango (diced)
1/3 cup sliced green onions
1 jalapeno pepper
(seeded and finely diced)
1/3 cup red bell pepper (diced)
1 small seedless cucumber (peeled and diced)
1/4 cup fresh cilantro (chopped)
1 clove garlic (minced)
1/4 cup lime juice
1/4 cup olive oil

1 tsp lime zest
Prepare salsa by mixing all ingredients except tuna steaks & 1 tbsp olive oil.  Salt and pepper to taste then cover and refrigerate at least 1 hour, longer if possible to allow flavors to mix.  Before cooking steaks remove salsa from refrigerator to take the chill off a little.  Brush tuna steaks with remaining olive oil.  Cook on a medium-high grill until desired preference.  Try not to over cook!
A good fresh tuna can be cooked to any degree of doneness.  Serve tuna topped with salsa mixture.  This dish goes well with seasoned rice and grilled vegetables.
